Cranberry-apple-walnut chutney

Cranberry-apple-walnut chutney                              Serves 10-12

Preparation time: less than 10 minutes

A sparkling accompaniment to any holiday feast, this festive chutney replaces the familiar cranberry sauce on your holiday table. Add more apple and celery and it becomes a salad the next day.

INGREDIENTS:

1 (14-15 oz.) can whole-berry cranberry sauce

1 large apple ~ Fuji or any kind EXCEPT “Delicious” variety

2-3 celery stalks, with leaves

¾ cup walnuts, broken

2 Tbsp. Cranberry-Pear balsamic vinegar

METHOD:

  1. Coarsely chop celery. Put into serving bowl.
  2. Core and chop apple. (Do not peel!) If using an Asian pear, core and dice it. Add to the bowl.
  3. Pour cranberry sauce into the bowl.
  4. Break up handfuls of walnuts by crushing them in your hand. Add to bowl.
  5. Stir to mix everything.
  6. Stir in Cranberry-Pear balsamic vinegar just before serving.
