The Trilye olive varietal is found only in Turkey. This dual-purpose table fruit and oil variety was harvested early, so it has a very fresh herbal aroma and complex green fruit flavor. It is a very robust olive oil with strong bitterness and high pungency that compliments the green fruitiness. The finish has both black and chili pepper characteristics.
Pair this oil with beef, lamb, bold cheeses, dark chocolate, pasta sauces, or caramelized foods. It stands up well to garlic and smokey flavors.
