This is a very early harvest Arbequina that has very unique flavor characteristics.  It tastes a bit like a mild Frantoio or Leccino.  It is very fresh and quite pungent with a nice bitterness on the mid palate that creeps up and keeps coming.  The oil is buttery and nutty, with mostly green herbal characteristics. 

Use this oil with steamed fish, mild greens, shellfish, scrambled eggs, or mild veggies and cheese.
