Chile has a climate similar to the olive rich Mediterranean region which is why excellent EVOOs have been produced in this South American country for years. The majority of this precious fruit grows between the Atacama and Maule regions, which allow the olives to reach optimum maturity before they are harvested and crushed. This well balanced & high in polyphenols Favolosa is grown on a small farm near Talka, Chile. This Italian variety has characteristics that include ample bitterness, pepper and grassy notes. There are also herbaceous notes of green fennel and radicchio. This EVOO is beautifully robust as a finishing oil!
