This is a robust oil with a very strong,  herbal flavor and great balance. It has pleasant grassy and floral aromas. The fruit flavors are subtle, and the green herbal flavors give it quite a kick. Its specific flavor characteristics are mostly herbaceous, dominated by fresh cut grass, mint, cinnamon and black pepper.

This high phenolic oil is best used as a nutraceutical in smoothies or bullet coffee.  It pairs well with lamb, bold cheeses, or a nice rib-eye.  It stands up well to garlic and smokey flavors.
