Sweet Heat Shrimp & Mango Skewers
Ingredients
For the Skewers
- 1 pound large shrimp, peeled and deveined
- 1 ripe mango, cut into chunks
- 1 red bell pepper, cut into chunks
- 1/2 red onion, cut into wedges
For the Marinade
- 2 tablespoons Harissa Olive Oil
- 1 tablespoon Mango White Balsamic Vinegar
- 2 cloves garlic, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
For Finishing
- Mango White Balsamic Vinegar for drizzling
- Fresh cilantro, chopped
- Lime wedges
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes.
- In a medium bowl, whisk together the Harissa Olive Oil, Mango White Balsamic Vinegar, garlic, sea salt, and pepper.
- Add shrimp and marinate for 20–30 minutes in the refrigerator.
- Thread shrimp, mango, bell pepper, and red onion onto skewers.
- Preheat grill to medium-high heat.
- Grill skewers for 2–3 minutes per side, or until shrimp are cooked through and vegetables are lightly charred.
- Remove from grill and drizzle lightly with additional Mango White Balsamic.
- Garnish with fresh cilantro and serve with lime wedges.
Serving Suggestion
Serve with coconut rice, a cucumber salad, or grilled vegetables for an easy summer meal.
