Sweet Heat Shrimp & Mango Skewers

Ingredients

For the Skewers

  • 1 pound large shrimp, peeled and deveined
  • 1 ripe mango, cut into chunks
  • 1 red bell pepper, cut into chunks
  • 1/2 red onion, cut into wedges

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a medium bowl, whisk together the Harissa Olive Oil, Mango White Balsamic Vinegar, garlic, sea salt, and pepper.
  3. Add shrimp and marinate for 20–30 minutes in the refrigerator.
  4. Thread shrimp, mango, bell pepper, and red onion onto skewers.
  5. Preheat grill to medium-high heat.
  6. Grill skewers for 2–3 minutes per side, or until shrimp are cooked through and vegetables are lightly charred.
  7. Remove from grill and drizzle lightly with additional Mango White Balsamic.
  8. Garnish with fresh cilantro and serve with lime wedges.

Serving Suggestion

Serve with coconut rice, a cucumber salad, or grilled vegetables for an easy summer meal.
