Fresh Tomato Bruschetta

In a small bowl, add one finely diced ripe tomato, one minced clove of garlic, and 2 tablespoons of finely chopped mixed Italian herbs. Traditionally we use basil but for this particular snack we used a combination of fresh oregano, fresh mint, and green onion which worked beautifully. Add a crack or two of sea salt and freshly ground pepper and about 2 tablespoons of fresh extra-virgin olive oil. We used our fresh Greek Koroneiki -as it has a nice well-balanced medium intensity flavor which is perfect for a dish like this because it’s strong enough to stand up but not too much to overpower the fresh flavors. Mix together and let the flavors mingle for about five minutes while you make your toasties. (You can do them ahead of time -low and slow in an oven to make them really crunchy like a traditional crostini but today we prefer a quick toast for just enough crunch and a little chew.) Toast 6 pieces of thinly sliced (about 1/2inch thick) baguette, and set aside for plating. Spoon tomato and herb mixture on top of you’re toasty slices and finish with a little drizzle of olive oil to finish! Bon Appetite!🍅🍃
