Ingredients

  • 3 ears fresh corn (or 3–4 cups cooked corn kernels)
  • ½ large red onion, diced (red is recommended, but yellow or white onion also works well)
  • 1 Honeycrisp or Cosmic Crisp apple, diced
  • 2–3 serrano or jalapeño peppers, finely chopped (remove the seeds for mild heat or leave them in for extra spice)
  • 1 bunch fresh cilantro, chopped
  • 2 limes
  • 2 tablespoons Island Olive Oil Company Extra Virgin Olive Oil(we recommend a mild EVOO or Lime flavored olive oil!)
  • 2–3 tablespoons Island Olive Oil Company Coconut White Balsamic Vinegar, or to taste

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 10–15 minutes, stirring occasionally, until softened and translucent.
  2. While the onions cook, prepare the remaining ingredients. Microwave the corn on the cob for 2–3 minutes per ear, then carefully cut the kernels from the cob into a large bowl. Dice the apple, chop the peppers, and roughly chop the cilantro.
  3. Add the corn, apples, and peppers to the skillet with the onions. Cook for about 5 minutes, stirring occasionally, until the apples begin to soften and everything is warmed through.
  4. Stir in 2–3 tablespoons Coconut White Balsamic Vinegar, adjusting to taste.
  5. Squeeze the juice of one lime over the mixture and gently fold in the chopped cilantro.
  6. Cut the remaining lime into wedges and serve alongside the hash for anyone who enjoys an extra squeeze of fresh citrus.
